Cranberry Mochi with Latvian Cranberries & Cream Cheese Filling
Ingredients for the mochi dough
- 100g sweet rice flour
- 2 tbsp sugar
- 160ml water
- 1/2 tsp lemon juice
- Dried Latvian cranberries
- 100g Latvian cream cheese
- 1 tsp honey or maple syrup
Coating
Cornstarch or potato starch to prevent from sticking
Instructions
Mix the dough ingredients and microwave for 2 minutes (stirring the mixture minute-by-minute) until it all binds together.
Whisk cream cheese, cranberries and honey.
Let the dough cool and shape into balls.
Roll out small patties, place some filling in the center, and shape into balls.
Add a sprinkle of cornstarch and serve cold.
